Coming from Teeswater, Ontario, Louisa took Home Economics at the University of Toronto and then taught school in Teeswater. She also taught at the Youth Training Centres in Sarnia and Windsor. These centres trained girls to become maids in upper class homes.

Louisa came to the OAC campus in 1941 to teach at the Royal Canadian Air Force (RCAF) school of cooking and transferred to the MAC staff at the end of the war. Many physical changes were required to convert it from an RCAF station to a school to teach young ladies, as well as develop the curriculum. The curriculum started with a one year program, and gradually a degree program was developed over the next three years. The degree program eventually became the Hotel and Food Administration program.
